It's what's for dinner tonight...
grilled pork chop, spinach casserole and pasta salad!
I like fresh spinach in salads and on sandwiches, but
I'm not a fan of cooked spinach (any greens, actually!).
However, if you "doctor" it up some, that makes it
palatable for me!
So, if you are interested...here's the recipe:
2 10 oz boxes frozen spinach
1 egg, slightly beaten
1 can cream of mushroom soup
8 oz sour cream
8 oz shredded mozzarella cheese
1/2 stack Ritz crackers, crushed
1/2 stick butter, melted
Boil spinach in salted water, drain.
Mix with egg, soup and sour cream.
Add cheese, mix.
Prepare 8x8 baking dish with cooking spray.
Pour mixture into dish.
Mix crushed crackers and butter until crumbly.
Sprinkle on top of casserole.
Bake at 350 for 30-35 mins.
And Believe it or not...
they are predicting SNOW for us starting
tomorrow night!
Estimating 3-4 inches!
We will see if it really happens.
I am excited...Hubby not so much! (bah! humbug!)
I hope I will have some pictures of the "white stuff"
to share!

ReplyDeleteHope you do get some snow. I'd love it!!!!! My sons in Texas might get some also--but they are afraid that they will only get the nasty ICE.... Hope they get some snow also.

Looks like an interesting weather pattern. Katie got notice that only necessary personnel should report to Camp Lejeune in North Carolina tomorrow and Wednesday. That hasn't happened for a very long time. Stay safe!!
