a recipe you might "fall" for!

Today, Jennifer is sponsoring Friday with Friends. Our assignment is a fall recipe. This is something that our family enjoys all year, but since it has pumpkin in it, I think it qualifies!

Pumpkin Bread

1 cup oil
3 cups sugar
4 eggs
1 can (16 oz) pumpkin
2/3 cup water
3 1/4 cups self-rising flour
1 tsp cinnamon
1 tsp nutmeg
2/3 cup Grape Nuts cereal ( or store brand equivalent)

Beat eggs slightly, add sugar and oil. Stir. Add pumpkin and water. Stir. Add dry ingredients and cereal. Mix well, but batter will still be lumpy. Grease two loaf pans well and divide batter into pans. Bake 1 hour. Cool in pans for 15 mins, remove from pans and continue to cool. Store in airtight container to keep fresh. This is very moist bread. Great for breakfast. We love it plain or with cream cheese.
Now just make yourself a cup of coffee or a cup of tea and enjoy!

  2. As many recipes as I've seen for pumpkin bread - never one that included Grapenuts cereal! And I LOVE Grapenuts (which is funny in itself...my parents always loved this cereal and I always thought it was a senior citizens' cereal!) Definitely will give this one a try:)

    So glad you joined Friday with Friends this week - I always enjoy these posts...and I'm lovin' all the recipes!

  3. I've fell! I love pumpkin bread, but never heard of Grape Nuts as a topping,bet it adds a delicious crunch! Thanks for sharing.

  4. Sounds fabulous! I tried a new pumpkin bread recipe last week as well...a pumpkin/orange loaf.
