zuppa...again!



I posted this recipe made with chicken once before about
 a year ago. Since then, I have been making it with
 sausage...and it is much better. 
So, I thought I would share it again.


Italian Soup

2 boxes (32 oz) chicken broth
1 lb beef sausage (the kielbasa type)
3 bags (12 oz) frozen Italian vegs
2 can (15 oz) diced tomatoes with basil, garlic, and oregano
3 tbsp Italian seasoning
1 bag frozen cheese filled ravioli (about 16 oz)
salt and pepper to taste
Parmesan cheese, optional for topping

Slice sausage and brown in small amount of oil or butter in frying pan. Pour broth into dutch oven or med size soup pot. Add browned sausage, tomatoes, Italian seasoning, salt and pepper. Allow to simmer for 15 minutes. Add frozen vegs and simmer until they are crisp tender. Add ravioli. Cook 3-4 more minutes. 

We just had it Sat night. It is really tasty
 with crusty bread or Texas toast!
