We had a few 70 degree days over the weekend and the first of the week. So, I made the first soup of the fall. It was delicious and the mini corn muffins were tasty, too. Sadly, the temps went back up and so did the humidity. Ugh! So, soup doesn't sound so appealing anymore. :-(
But I made a huge pot full so we have to eat it until it's gone. Or maybe I will take Ellen's advice and share it with the neighbors. :-)

Big pots of homemade soup are wonderful in cooler weather. I think much of the world would laugh and you and me calling 70's temperatures "cool" however! But I know just what you mean. It sure feels wonderfully cool to me. I made a big pot of bean soup yesterday...it was "cool" yesterday morning but then warmed up to the mid 80's. Looks like you and I are in the same situation with lots of delicious winter-weather soup but summertime climates at the moment.

Would this freeze well? I'm trying to start cooking some things that we can freeze to have for after the baby comes. I need ideas.
